Here comes another tip from my dear Mother--don't get on your counters! Just turn the head of lettuce over and smack the stem on the counter or edge of the sink. Then you can just pull it out.
(I'm only 5'2" and my mother would have had a HUGE fit if I hopped up on the counter.)
